<p>Making Gluten Free desserts is one of my favorite things to do. Finding new recipes is very exciting for me because it means I can try something new. </p>
<p>Here is the recipe:</p>
<blockquote><p>Ingredients:<br />
3 medium ripe Banana&#8217;s smashed or 9 ounces of pumpkin<br />
1/3 maple syrup<br />
1 teaspoon GF vanilla (I use Frontier Alcohol-Free from Fair trade)</p>
<p>Directions:<br />
Mix together and set aside.</p>
<p>Toppings- 1 cup sugar and 2 teaspoons cinnamon. Mix together and set aside (place into shaker like salt or recycled pumpkin spice container).</p>
<p>Muffin Mix Ingredients:<br />
2 cups gluten-free flour<br />
1 teaspoon xanthan<br />
1 cup packed brown sugar<br />
1 teaspoon baking soda<br />
½ teaspoon salt<br />
1 teaspoon pumpkin spice<br />
2 table spoons buttermilk powder<br />
2 eggs beaten<br />
1/3 cup vegetable oil<br />
½ cup water</p>
<p>Directions:<br />
Combine all dry ingredients into a mixing bowl, make a well in the middle and add the wet, stir with a mixing spoon softly until combined&#8211;don&#8217;t stir just blend. Gently fold in bananas or pumpkin mixture with a knife until blended, then let rest for 7-10 minutes and fill foil cupcake papers and place on a cookie sheet (makes 13-15 muffins). Top with topping mixture and bake at 375F degrees for 10- 15 minutes or until done. Place on wire rack until cool.</p></blockquote>

			<content:encoded><![CDATA[<p>Over the past few months I have seen 2 major companies expand to include Gluten Free products, <a href="http://www.glutenfreespot.com/2009/11/03/albertsons-carrying-gluten-free-betty-crocker/">Betty Crocker</a> and <a href="http://www.glutenfreespot.com/2009/09/21/article-chex-expanding-more-gluten-free-options/">Chex</a> have both came out with new products that are Gluten Free and I could not be more pleased. It is safe to say that the rising awareness of Celiac Disease and Gluten Free diets are forcing these companies to come out with products so they can please the market. If these major companies are going Gluten Free one would think they other major companies would also to keep up and gain an edge over the competition. The main selling points for them I believe are:</p>
<ul>
<li><strong>Gluten Free diets are not a fad</strong>: Unlike many diets, people who follow a Gluten Free diet do it because it is necessary, not by choice.</li>
</ul>
<ul>
<li> <strong>Rising numbers</strong>: The amount of people following a Gluten Free diet is on the rise and the company that has the most to offer can gain a competitive advantage.</li>
</ul>
<ul>
<li> <strong>Competition from other major players</strong>: We already have quite a few Gluten Free brands, but now with Betty Crocker and Chex coming out with their products it wont take long before other companies jump on that avalanche and can start cashing in.</li>
</ul>
<p>It makes sense for companies to make Gluten Free products. Not only will they please more people and gain loyal customers but they can make a lot of money on these products. Companies would need to have a facility dedicated to their GF products like Betty Crocker has stated on their box, it does not have to be as large as the other plants but in order to ensure no cross contamination and make their consumers feel safer they would need to have a seperate facility. The creation of a Gluten Free division would be feasible, and a sound move. <strong>What company do you think will be next to make a major splash in the Gluten Free pool?</strong></p>

I recently found an article that explains the health benefits of eating oats. I found the article on <a href="http://health.learninginfo.org/benefits-oatmeal.htm" onclick="pageTracker._trackPageview('/outgoing/health.learninginfo.org/benefits-oatmeal.htm?referer=');">Health.Learninginfo.com</a>. It goes into some good detail about oats and how they can benefit the body. Recently I have been eating oatmeal nearly everyday, I am glad I found a breakfast that is both delicious and healthy for me. If you have not tried oatmeal or do not eat a lot, I would at least give it a shot.</p>

<p>According to the article and the American Cancer Society oatmeal can benefit the body simply because oats are a good source of soluble and insoluble fiber.</p>
<p>Here are 6 reasons why oats are good for your health:</p>
<p>1. Insoluble fiber&#8217;s <strong>reduce</strong> toxicity in certain bile acids.</p>
<p>2. Soluble fiber may <strong>reduce</strong> bad cholesterol.</p>
<p>3. Soluble fiber slows down the digestion of starch.</p>
<p>4. It has been found that those who eat more oats are<strong> less likely to develop heart disease</strong>.</p>
<p>5. The <strong>phytochemicals</strong> in oat may also have cancer-fighting properties.</p>
<p>6. Oats are a good source of many nutrients including <strong>vitamin E, zinc, selenium, copper, iron, manganese and magnesium</strong>. Oats are also a good source of protein.<br />

Eating a good breakfast can make you more attentive, maintain good health and it can be tasty. Even if you do not need to follow a Gluten Free diet you should still give your top 5 breakfasts.These do not have to be in any particular order. Here are my top 5 Gluten free Breakfasts.</p>
<p><strong>1. <a href="http://www.glutenfreespot.com/2009/09/28/product-review-bobs-red-mill-rolled-oats/">Gluten Free Oatmeal</a> </strong>: Top with some brown sugar and milk and you have a nice treat.</p>
<p><strong>2. Gluten Free Van&#8217;s Waffles</strong>: Eating these with a little syrup leads to a good morning.<img class="alignright" title="df" src="http://t3.gstatic.com/images?q=tbn:RaTnXUC9JhvFXM:http://www.rendezvoushotels.com.au/sydney/images/food3.jpg" alt="" width="210" height="160" /></p>
<p><strong>3. <a href="http://www.glutenfreespot.com/2009/09/21/article-chex-expanding-more-gluten-free-options/">Cereal</a> </strong>: Now with more choices than ever you are sure to find a cereal that you will enjoy.</p>
<p><strong>4. Eggs and Bacon </strong>: An old favorite of mine, cannot go wrong here.</p>
<p><strong>5. Bagel with Cream Cheese :</strong> Another good option for breakfast, tastes great also.</p>

			<content:encoded><![CDATA[<p>Right on the label in large print it reads “Gluten Free” it is also wheat free and dairy free. Bob’s red mill makes this product in a dedicated facility to ensure that no oats get contaminated with gluten. From all my readings I understand that oats themselves do not contain gluten but most oats available in stores are somehow contaminated with gluten so it is great to see a label like that on a product. I paid about $7 for 2 lbs of oats at Bear Market in Chelan, WA while on vacation.<br />
Preparation: Just followed the stovetop package directions but I made half of what the instructions said. I brought 1 cup of water to a boil with a dash of salt. Added .5 cups of rolled oats and reduced the heat, stirring on occasion. Cover and remove from heat for a few minutes and enjoy! I also added a little bit of vanilla soy milk and a couple spoons of brown sugar. Took about 7 minutes total.</p>

Taste: A- Oatmeal does not have that much taste to it anyways but these were not bad, you can definitely make it taste the way you like it by adding brown sugar or applesauce or whatever you like.<br />
Repeat buy: A  Oatmeal choices are limited but Bob’s has a great product and I will continue to purchase their rolled oats.<br />

<p>This is very exciting because I know I have been limited in my cereal choices over the year, mainly sticking to coco and fruity pebbles and a couple other gluten free brands. The article mentions that “strong customer insight” was one of the catalysts for coming out with these new cereals. If we continue to give comments and tell companies there is a demand for gluten free products our options with continue to grow! Have you guys had a chance to try these? What kinds of Gluten Free cereals do you all enjoy to eat?</p>
