			<content:encoded><![CDATA[<p>I heard of a good article about Celiac Disease and Gluten more specifically. It talks about Gluten and that it might be reasons why you are feeling ill. A lot of people are giving up Gluten to see if that is what was causing them to feel sick. </p>
<blockquote><p>&#8220;Something you&#8217;re eating may be killing you, and you probably don&#8217;t even know it,&#8221; cautions Mark Hyman, M.D., in a blog post on the Huffington Post.</p>
<p>&#8220;A recent large study in the Journal of the American Medical Association found that people with diagnosed, undiagnosed, and &#8216;latent&#8217; celiac disease or gluten sensitivity had a higher risk of death, mostly from heart disease and cancer,&#8221; he writes.</p></blockquote>

			<content:encoded><![CDATA[<p>Over the past few months I have seen 2 major companies expand to include Gluten Free products, <a href="http://www.glutenfreespot.com/2009/11/03/albertsons-carrying-gluten-free-betty-crocker/">Betty Crocker</a> and <a href="http://www.glutenfreespot.com/2009/09/21/article-chex-expanding-more-gluten-free-options/">Chex</a> have both came out with new products that are Gluten Free and I could not be more pleased. It is safe to say that the rising awareness of Celiac Disease and Gluten Free diets are forcing these companies to come out with products so they can please the market. If these major companies are going Gluten Free one would think they other major companies would also to keep up and gain an edge over the competition. The main selling points for them I believe are:</p>
<ul>
<li><strong>Gluten Free diets are not a fad</strong>: Unlike many diets, people who follow a Gluten Free diet do it because it is necessary, not by choice.</li>
</ul>
<ul>
<li> <strong>Rising numbers</strong>: The amount of people following a Gluten Free diet is on the rise and the company that has the most to offer can gain a competitive advantage.</li>
</ul>
<ul>
<li> <strong>Competition from other major players</strong>: We already have quite a few Gluten Free brands, but now with Betty Crocker and Chex coming out with their products it wont take long before other companies jump on that avalanche and can start cashing in.</li>
</ul>
<p>It makes sense for companies to make Gluten Free products. Not only will they please more people and gain loyal customers but they can make a lot of money on these products. Companies would need to have a facility dedicated to their GF products like Betty Crocker has stated on their box, it does not have to be as large as the other plants but in order to ensure no cross contamination and make their consumers feel safer they would need to have a seperate facility. The creation of a Gluten Free division would be feasible, and a sound move. <strong>What company do you think will be next to make a major splash in the Gluten Free pool?</strong></p>

			<content:encoded><![CDATA[<p>I found a cool site that has some <a href="http://www.celiac.com/articles/1164/1/Celiac-Disease-Statistics/Page1.html" onclick="pageTracker._trackPageview('/outgoing/www.celiac.com/articles/1164/1/Celiac-Disease-Statistics/Page1.html?referer=');">statistics on Celiac Disease</a> and I thought it would be interesting to take a look at some of the stats. Some of the ones that stood out for me was the fact that just ten years ago many doctors thought celiac disease was pretty rare and only effected about 1 in 2,500 individuals that mainly effected children and younger people. I also found it interesting that about <strong>1 in 133 people have Celiac Disease</strong> but only a small number are actually diagnosed with it. That works out to about <strong>3 million Americans</strong> having Celiac Disease, which is pretty big. The article also goes in to detail about other conditions that can happen if Celiac is not diagnosed.</p>

<p>Gluten is now one of the most common food allergies according to <a href="http://www.ific.org/publications/brochures/allergybroch.cfm" onclick="pageTracker._trackPageview('/outgoing/www.ific.org/publications/brochures/allergybroch.cfm?referer=');">IFIC</a>. Like I have said in previous posts, as this diet becomes more common there will be more options for us to eat and places to go that we can find a Gluten Free menus at. Check out statistics and do research and you will find a lot of good information! Celiac Disease is becoming more common and I think that it will start to be diagnosed even more once people recognize the <a href="http://www.glutenfreespot.com/2009/09/16/symtoms-of-celiac-disease/">symptoms</a>!</p>

I was just a kid so I was unaware of what this meant. These symptoms led to a variety of tests to find out what was wrong. I will go into the diagnosis further in the next post.</p>
